I thought that the kids were left in their mice forms at the end of this movie. Am I remembering wrong? Didn't the final scene have something to do with Luke realizing that as a mouse he would only have a few years left to live?

No, in the movie, the kids are restored to human form. Luke is shown being restored and as the good witch is leaving, Luke calls out "Don't forget Bruno".
It is in the book where they remain mice at the end. ( Actully the original ending of the book had the kids restored but Roald Dahl's publisher convinced him to change it - the movie's producers used the original ending so as not to scare the film's intended target - children ).

I think there must have been two endings to the movie (that happens sometimes). I've never read the book, and I know I didn't imagine the ending with the boy still a mouse and his diabetic Grandma telling him she will take care of him for as long as his mouse lifespan allows.

The kids remain mice in the book. I have the movie on video and DVD. I've seen it quite a few times. They are turned back to human form at the end of the movie. I also have Roald Dahl's biography, he had urged a boycott of the film because it changed the ending of the book.
